Chicken Tortilla Soup (Crockpot Version)



  • 4 cups chicken broth
  • 2 cans (14.5 0z each) diced tomatoes
  • 1 onion chopped
  • 4 garlic cloves minced
  • 1 tbsp cayenne 
  • 1.5 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp ground coriander
  • salt and pepper to taste
  • 1.5 lbs chicken breast 
  • 1 can black beans rinsed 
  • 1 cup frozen corn
  • 1 lime
  • 1/4 cup chopped cilantro


Pour chicken broth and diced tomatoes into crockpot.  Add in onions, garlic, cayenne, cumin, paprika, coriander, and salt and pepper to taste.  Add in chicken breast and cover and cook on low for about 4-6 hours until chicken breast is fully cooked.

Remove chicken and shred.  Then return to crockpot and add in the remaining ingredients- black beans, corn, juice of a lime and cilantro.  Continue to cook until all ingredients are heated through.

Serve with tortilla chips and avocado!
